            BLU, a 75-seater restaurant perched atop Shangri-La
              Hotel, Singapore's Tower Wing on the 24th floor, has carved a name
              for itself as a dining establishment with a difference.  
            Setting the mood for the evening are the lighting
              effects in the high barrel-shaped roof of the restaurant, and fibre
              optics on the floor and glass bar. Together with the spectacular
              views of the city skyline through floor to ceiling windows, live
              jazz performance and pieces of art by world-renowned artists that
              tastefully adorn the restaurant, the ambience of this three-year-old
              award-winning restaurant and bar is an experience in itself.  
            Serving "creative, fresh and light contemporary Mediterranean
              cuisine using old world traditional methods with a modern presentation,
              and Californian produce", in the words of Chef de cuisine Peter
              Schinter, the inspiration behind BLU's cuisine is derived from
              his myriad of travels and experiences in Italy, Spain, North Africa,
              Greece and home in California.  
            With menus and wine lists that change seasonally,
              Chef Schintler recently introduced a delightful summer menu including
              innovative dishes such as 'Grilled Ahi Tuna with Hudson Valley
              Foie Gras, White Anchovy Croquettes and a Sangiovese-Pomegranate
              Jus' and 'Souffle of Lobster enhanced with Rosemary, served with
              a savoury Chardonnay-Vanilla Bean Sauce'. 
             Commenting on the BLU experience, Chef Schintler
              says, "Guests should feel special, yet relaxed. I like to see people
              laugh and smile, and not worry about dropping their fork on the
              floor or whether someone is listening in on their conversation.
              I don't like the seriousness and stiffness of old world service
              and formality."  
            BLU has been the recipient of numerous accolades,
              including making Conde Nast Traveller's Top 100 New Restaurants
              list in 2001; one of Singapore Tatler's Singapore's Best Restaurants
              (2003); one of Singapore's Top Restaurants (2003) as rated by Wine & Dine;
              and most recently, one of the world's Great Hotel Restaurants by
              US publication, HOTELS.  
            BLU offers an extensive wine list and a ala carte
              as well as set menus and is open for dinner Monday through Saturday.
